This weekend Jay and I went to have some vegan blueberry cheesecake, yum! There are so many restaurants that are popping up all over the country with more plant based options. There are also so many recipes that are both delicious and kind to animals.

Veggie Grill's Cheese Cake Recipe1 - Graham cracker crust
2 - 8 oz. containers toffutti cream cheese (yellow label, non-hydrogenated)
1 - 8 oz. container tofutti sour cream
1 - tbls. lemon juice
1/4 cup flour
3/4 cup sugar
1 1/2 tsp. pure vanilla extract
pinch of saltBlend all ingredients until creamy then pour into a graham cracker crust and bake at 350
degress for 40 minutes. Cool slightly and refrigerate overnight or longer.
